Vicia faba.
A legendary fava bean with exceptionally large seed size and excellent flavour. Aprovecho Select produces tall, vigorous plants with heavy yields of pods, each typically containing four large green seeds. The beans are excellent fresh or dried, and the young leaves and shoots are also edible and make a delicious early salad green.
I was gifted this variety by Heike-Marie Eubanks of Cherry Hill Gardens in Myrtle Point. What an incredible surprise to grow such massive beans! Some are on the smaller side to do severe drought during the growing season.
Aprovecho Select was originally selected for hardiness and flavour by Ianto Evans at the Aprovecho Research Center in Cottage Grove, Oregon. Ianto Evans and the Aprovecho Research Center are foundational figures in the permaculture and appropriate technology movement, making this fava bean not only a strong garden performer but an important piece of seed history.
