Heirloom Winter Squash Seeds
Heirloom winter squash are varieties of the genus Cucurbita that have been passed down through generations for their flavour, storage capacity, and ability to grow true to seed. Unlike summer varieties that are eaten while young and soft, these are grown to full maturity so they develop a thick, protective rind. This hard outer shell is essential for long-term preservation, allowing the squash to be stored in a cool, dry place for several months throughout the winter. These plants were originally domesticated in the Americas thousands of years ago and were a primary food source for indigenous peoples because of their high calorie content and nutrient density.
The growth habit of these heirlooms is usually characterized by massive, sprawling vines that can reach twenty feet or more in length. These vines are covered in large, bristly leaves and produce yellow or orange flowers that require pollination by bees to set fruit. Because they have a long growing season, they stay in the ground from late spring until the first frost of autumn. During this time, the squash develops a dense, low-moisture flesh that is rich in complex carbohydrates and vitamins. The flavour of these varieties is generally much more intense than modern hybrids, often having a deep sweetness and nutty undertones that improve as the starch converts to sugar during storage.
The physical appearance of heirloom winter squash is incredibly diverse because they were bred for different regional climates and culinary uses. Some varieties have smooth, tan skins and long necks, while others have heavily ribbed, warty, or slate-blue rinds. The internal flesh colour usually ranges from pale yellow to a deep, burnt orange, indicating a high concentration of beta-carotene. Because these are true heirlooms, the seeds can be scooped out, dried, and planted the following year to produce the exact same type of squash. This process of seed saving is what allowed these specific lineages to survive for hundreds of years without being lost to industrial farming.
