A cultivated variety of the native red Jerusalem artichoke, this plant produces an abundance of edible tubers. It can reach up to 10 feet tall, with striking, long-blooming yellow flowers that bloom in October. Thrives in most soil types. The tubers are larger than the red variety and are perfect for roasting, soups, or stews. Rich in inulin, they are both nutritious and versatile. Late variety. 5 tubers per order.

I have named this white ‘Blackbird’ to keep track of where I got it from. I am seeing some differences in white tubers and think that is used as a common name. This is a very nice variety with good tuber set. They handled the drought better than many varieties. Flowering started in October.
