Metchosin Sunchoke

This Jerusalem artichoke has been grown organically and selected for vigour in coastal climates. Metchosin sunchokes (Helianthus tuberosus) are hardy perennials, known for producing crisp, nutty tubers that sweeten when cooked.

They’re well adapted to short seasons and cold winters, and once established, they return reliably year after year. Tubers can be harvested in late autumn or overwintered in the ground and dug in early spring. This variety spreads readily, making it a dependable crop for food security and winter harvesting.

Plant in full sun and well-drained soil. Best harvested after frost for sweeter flavour. Excellent roasted, sautéed, or sliced raw in salads.
