Iris’s Sunchoke

This sunchoke was shared with me by Iris, a fellow Seed Saver in New Brunswick. I sent her some Clearwater in exchange, and she was amazed by how different they were. While I’m still learning the full characteristics of Iris’s sunchoke, it’s already clear that it has a unique look and feel compared to more familiar types.
