Materials Needed:
Jerusalem artichoke tubers
Garden spade or shovel
Compost or well-rotted manure
Mulch (straw, leaves, or grass clippings)
Instructions:
1. Choose a Suitable Planting Site:
Soil: Jerusalem artichokes grow best in well-drained, loamy soil. Avoid heavy clay or waterlogged areas.
Sunlight: They prefer full sun but can tolerate partial shade.
Space: These plants can grow 6-14 feet tall, so choose a spot with enough vertical space and at least 3 feet between rows to prevent overcrowding.
2. Prepare the Soil:
Loosen the soil to a depth of at least 10 inches. Remove any weeds or large rocks.
Incorporate compost or well-rotted manure into the soil to boost fertility.
3. Plant the Tubers:
Timing: Plant the tubers 2-4 weeks before the first hard frost in your area.
Cut the tubers into smaller pieces if they are large, ensuring each piece has at least 2-3 “eyes” (small, raised bumps).
Plant tubers 4-6 inches deep and about 12-18 inches apart in rows.

Mulching also protects the tubers from harsh winter conditions. In Cold Canadian Climates- Please mulch WELL! I go a little overboard and remove most of it in the spring.

Jerusalem artichokes are hardy perennials and can survive cold winters. The tubers will lie dormant underground until spring, so no additional care is required through the winter months.
7. Spring Growth:
In the spring, you will notice new shoots emerging from the ground. Thin the plants if they seem overcrowded by removing some of the weaker shoots.
