Heirloom tomatillos are open-pollinated varieties that have been passed down through generations, valued for their unique flavours, textures, and colours. Unlike standard tomatillos, which are typically green, heirloom varieties can come in various shades, including yellow, purple, and red.

These heirloom tomatillos often have a more complex and rich flavour than commercial varieties, ranging from tart to sweet, depending on the specific type. They thrive in warm climates and require full sun, making them ideal for gardens in suitable regions. Planting should occur in the spring after the last frost, and they grow well in well-drained soil rich in organic matter.

One key characteristic of tomatillos is that they are not self-pollinating, so it is essential to grow at least two plants together to ensure proper fruit development. Heirloom tomatillos are commonly used in salsas, sauces, and soups, and they can also be roasted or grilled. Before cooking, the husks should be removed.

Harvesting tomatillos typically occurs when the husk is dry and the fruit is firm, allowing for different flavours depending on the maturity of the fruit. Fresh tomatillos can be stored in the refrigerator for a couple of weeks, and they can also be canned or frozen for longer preservation.
