The Ruby Jerusalem Artichoke has a distinct reddish or ruby-coloured skin. The tubers are elongated, which makes them easier to peel compared to more knobby varieties. They have a sweet, nutty flavour, which is typical of Jerusalem artichokes, with a crisp texture when raw and a creamy consistency when cooked.
This variety is known for its high productivity and vigorous growth. It typically matures in about 120 to 150 days.
The plants can grow quite tall, often reaching heights of 8 to 10 feet.
Produces small, yellow, sunflower-like flowers.
This variety’s tubers closely resemble those of Red Fuseau. I originally bought three tubers for $25.00 from the Canadian Organic Seed Company. I wondered if they had simply renamed the variety and raised the price. However, there is a slight difference in their flowering times: Red Fuseau flowered five days earlier than Ruby. The plants also look a little different.
Prefers well-drained, loose soil but is adaptable to various soil types.
Sunlight: Performs best in full sun to partial shade.
Watering: Requires regular watering, especially during dry periods.
Harvesting: Tubers are usually harvested in the fall after the first frost, which helps to sweeten their flavour. They can be stored in the ground and dug up as needed throughout the winter.
Invasiveness: Can spread aggressively through their tubers if not managed properly, sometimes becoming invasive.
Pests and Diseases: Generally resistant to pests and diseases, though occasional issues with slugs, snails, and fungal infections may occur.
The Ruby variety is a result of selective breeding aimed at enhancing its culinary qualities and resistance to pests and diseases. It is appreciated for its sweet taste and smoother texture compared to other Jerusalem artichokes.
Jerusalem artichokes are native to North America and were cultivated by Indigenous peoples long before European colonization. The Ruby variety, like other sunchokes, is rich in inulin, a type of fiber that supports digestive health.
Ruby Jerusalem Artichokes are versatile in the kitchen. They can be eaten raw, roasted, boiled, or made into chips. Their striking colour makes them an appealing addition to salads and other dishes.
Health Benefits: Known for their prebiotic properties, promoting gut health by supporting the growth of beneficial bacteria.
