Caraway Seeds
Caraway is a biennial herb with feathery green leaves, delicate white or pink flowers, and highly aromatic seeds. It thrives in full sun and well-drained soil, growing up to 60 cm (2 ft) tall. The young leaves have a mild, parsley-like flavour and can be used fresh in salads, soups, and sauces. The roots are also edible and can be cooked like a vegetable.
Caraway seeds are the most well-known part of the plant, offering a warm, earthy flavour with notes of anise, citrus, and pepper. They are used in breads, stews, sauerkraut, cheeses, and liqueurs. Medicinally, caraway has been valued for aiding digestion, relieving bloating, and soothing stomach discomfort. The plant completes its life cycle after the second year but readily self-seeds for continued growth.
