Petroselinum crispum.
Hilmar Root Parsley
$4.50
European heirloom root-type parsley. It produces long, slender white roots 6–8″in length with a mild, aromatic parsley flavour. The green foliage is also edible. Plants grow approximately one metre tall and are winter-hardy, performing well in cold climates. It is suitable for large containers or garden beds and thrives in Canadian climates. 100 + seeds.
This variety is typically direct-sown outdoors in well-drained, fertile soil, with rows spaced about 30 cm apart and thinning to 10 cm. Roots are usually harvested in the fall or overwintered and can be stored like parsnips. Germination is relatively slow, often 10–20 days, and maturity is reached in late fall, depending on sowing date.
