Cucurbita maxima
An Appalachian heirloom with deep roots, first bred by the Cherokee Nation in the 1800s. This rare squash is celebrated for its long, banana-shaped fruits with salmon-pink skin, blue-tipped ends, and striking torpedo form. Typically weighing 8–20 pounds and averaging 18 inches in length.
The dense, sweet, nutty flesh is smooth and dry—perfect for pies, breads, soups, roasting on the half shell, or even stuffing. Known throughout the Southern Appalachians for its rich flavour and versatility, the North Georgia Candy Roaster is also recognised as a keeper variety on the Slow Food USA Ark of Taste. With excellent storage qualities, this is a great food security variety.
