How to Grow Sunchokes from Seed (with Cold Stratification)

Cold Stratification:
Place sunchoke seeds in a damp paper towel or a sealed plastic bag with moist sand or peat moss.
Store them in the refrigerator for 4-6 weeks to break dormancy.

Prepare the Soil:
